Vitamin C which is extensively present in the citric fruits is likely to be destroyed due to excessive heat,water and exposure to air. All the types ofvitamin B are sensitive to heat. ButThiamine and folic acid generally known as Vitamin B-1 and B-12 respectively can be destroyed on cooking.
