Zymase is an enzyme that catalyses fermentation of organic matter.

In this process zymase releases carbon dioxide  as a byproduct of this reaction.

This zymase catalysis reaction is generally observed in yeast.

Zymase converts organic matter say sugar to ethanol and carbon dioxide.

Organic matter         →          Ethanol   +  Carbon dioxide (CO2)
