Both of them have absolutely no difference in their forms. Difference is in the way they are used.

Demonstrative adjective will be always followed by a noun. eg- This house is mine.

Demonstrative pronouns will not be followed by a noun. eg- This is my house.

In the example u have mentioned, these is a demonstrative pronoun. The sentence does not have any demonstrative adjective.
