Only if you are talking about more than two people would “tallest” be the correct choice. For example: “He is the tallest of the three.”

It works with other comparisons as well:

She is the older of the two girls.

Of the five siblings, she is the oldest.

He is the harder working of the two employees.

He is the hardest working of all of our 157 employees.

Vanilla ice cream may be good, but chocolate is better.

Between vanilla, chocolate and strawberry ice cream, I think strawberry is the best.
