Reaction centres of the photo system in plant cells are named as P700 and P680 because of the following reason:

P680 is a reaction centre in chloroplast with the responsibility of absorption of light energy and use it for other purposes.

Now, this reaction centre is able to absorb maximum amount of light energy at a wavelength of 680 nm from the whole electromagnetic spectrum.

Similarly for P700,

the reaction centre following Z scheme will absorb maximum amount of light energy at 700 nm wavelength from the whole spectrum of electromagnetic waves.
