Well, funny things happen in nature. The potato is indeed a stem tuber which happens to be underground. And when not underground or covered by soil the potato tuber builds chlorophyll and turns green.
Another funny thing; a fruit growing underground; the peanut pod. This is actually a bean containing seeds called peanuts which are actually, you guessed it, beans. After fertilization the flower/pod buries itself. The peanut plant sows her own seeds. Cool huh?
