tiny holes are seen in indian food like idli and dosa. give reason.please help me . it is urgent.

it is because of soda. the soda is actually calcium carbonate . which which they put in dosa

This tiny holes are created due the fermentation taken place in the mixture of rice. These holes are created when tiny bubble of CO2 is released due to the respiration of bacteria present in the mixture. The same thing occurs in the case of rise of bread dough too and cake as well but in cake the process is chemical (reaction of baking soda +citric acid present in the baking powder).
