Heyya!
Here's how I usually take notes from paragraphs:-
First, I read it thoroughly with immense concentration. Then I write down what this paragraph's main topic or theme is and write it as a heading. Then I write 'What does the paragraph want to convey?' as points. While taking down notes, write it down as points. When you write it as a humongous paragraph or an essay, later when you need to refer it, you won't feel like reading it because there will be a lot to read. But when written as points, you get the general idea and these points help you to convert it to essays when you need to write them for your exams! I divide the points to introduction, body and conclusion- usually we divide essays like that but Hey! You can be creative when you want to, right? So the introduction part should include a couple of sentences about how the paragraph starts, what the starting points are and such. The body should include what are the main points given in the paragraph that describe the topic. Here, include more points and sentences. The concluding part should include points which the paragraph has included at last. Don't copy paste the points in your note! Write them the way you've understood them. Read them properly and then understand what the concept is, with this it will be easier to write notes!
Make sure you write neatly and draw some decorations with color pencils or sketch pens (you're never too old to use them!). Add diagrams to your notes. Diagrams help us in remembering things better. I don't know if that's the case with everyone, but when I learn with diagrams, I remember them during exams.
Next, include extra points or points from your side or your opinions. You can also include lecture notes! Also highlight the very very Important points (The V.V.I.P's)
Keep learning and May you succeed greatly in life!
Stay blessed!
