To compare the rate of fermentation of the given samples of wheat flour gram flour rice and potatoes

Wheat flour,gram flour,rice flour and potatoes has starch as major constituent.  

Starch present in food materials is brought into a solution in presence of enzyme diastase starch undergoes fermentation to give maltose.

Blueish violet color is seen by mixing starch with iodine though product of fermentation don't give remarkable color.  

When fermentation is complete reaction mixture stops giving blue-violet color with iodine solution.  

Comparing time required for completion of fermentation of same amounts of various things containing starch rates of fermentation could be related with.  

Diastase is obtained through germination of moist barley seeds.

After germination is completed the temperature is increased to 60 degrees to stop growth.

Seeds are crushed in water and filtered.

Filtrate contains enzyme diastase and is a malt extract.
