Starch has two components
Amylopectin which is 85 percent,soluble is hot water
Amylose which is 15 percent,soluble in cold water
Therefore we mix Starch with hot water at room temperature
On the other hand ....egg albumin is a protein whose molecular size is big and using got water for mixing them easily coagulates the protein
