Chip's and all the other items which have fats inside them or have glycerol constituent, they are being flushed with nitrogen gas to preserve them from Rancidity .
Reason - when such oil containing item is being kept in atmosphere, they are being in direct contact with Oxygen and thus oxidised them ( evident change- taste changes )
- here O2 is an oxidising agent
Also food are being kept in refrigerator for same reasons
( to preserve them from atmosphere ) .
