Like plants tomato. carrot and chilies undergo through the process of photosynthesis and contain two pigment chlorophyll and lycopene.

When they are at the initial stage of growth they appear green, however as they continue to grow its color changes to orange to red color, it occurs due to the presence of lycopene pigment.

This pigment is generated by the plant in order to save them from oxidation, the bright red color of the tomato is because of the presence of lycopene carotenoid, it is a good antioxidant, which saves the body cells from free radicals which cause aging of the cell
