Animal Cells have enough amount of water that make it swell. About 80% of the cells is water only, so you can easily estimates that value.

In short we can say that water have a vital contribution in the formation of Cytoplasm of the cell.

As we all know that Hypertonic solutions are those in which the concentration of solute particals is more outside and lower inside the solution.

So Now Cell's cytoplasm is filled with water and outside the cells the amount of water (solution) is lower so water molecules moves towards the Higher concentration to Lower concentration.

So when a cell is put into this solution , obviously it will get shrinked due to Concentration Gradient.

As a result of this phenomenon , the animal cell get shrinked.
