This is due to electromagnetic induction
this states that if there is a movement in current or magnetic field, current will be induced.
If current is changed in other coil, the magnetic field is induced hence current is induced.
When it is turned off, the magnetic field is suddenly withdrawn, hence there is a change, thus current is induced
