The Deccan is a rocky-land in India. It is with mountains and rivers running towards the east across
the Deccan into the Bay of Bengal. During the rainy season these rivers are like raging torrents, but
through winter and by summer they gradually dry-up.
Farming in the Deccan is hard work, for, the soil is not very rich, and hardly anything will grow
without irrigation. Everyone grows vegetables and a little rice. The sugarcane is a good crop because the
local sugar factory, a few miles away, will give a good price for it. Every farmer will take some of his
crops to the village sugar maker to make hard brown sugar. The sweet sap is crushed out of the canes
and boiled for hours in a huge iron pot until it is like coffee. Then the syrup is poured into clay jars or
holes in the ground to cool.
