$wo = weight \: of \: onions$

$wr = weight \: of \: remaining \: vegetables$

$500 = wp + wo + wr$

$500 = ( \frac{500}{2} ) + ( \frac{500}{2} \times \frac{1}{2} ) + wr$

$500 = 250 + \frac{250}{2} + wr$

$500 = 250 + 125 + wr$

$500 = 375 + wr$

$wr = 500 - 375$

$= 125kg$

$weight \: of \: remaining \: vegetables = 125kg$
