Yeast is a single cell organism which does all the magic in alcohol production. Yeast feeds on the sugars in the grape juice & grain extract(called Mash for beer & spirits) and produces Ethyl Alcohol & Carbon-di-oxide as byproduct. Wine yeast strains differ from beer yeast.

Hence, Yeast plays a major role in Alcohol Production. Yeast strains remain the same in many alcohol producing companies as they maintain their culturing labs and hold them as an asset.
