water can be changed it states solid liguid gas but why can't anther objets

because firstly it is a liquid and we can change any liquid like juice, milk etc. into these states and most importantly it is universal solvent.

it depend upon reaction which takes place after cooling or heating
some substance has physical reaction whether
other has chemical reaction
and water is one of them which has physical reaction
