Water changing to steam on gas stove is known as:-->Boiling. The reason is that,water gets heated completely,at 100°c. It forms bubbles,too,in the process. Evaporation can't be used here, because in that case,bubbles are not formed. But,you obviously know that,when we boil water,it heats and forms bubbles. So, it's going through the process of boiling.
