Suppose that we slowly heat water in a container whose temperature is below 100°C at atmospheric pressure,

As heat continues to supply & once 100°C is reached, the additional heat does not increase the temperature of the water but leading to conversion of water to gaseous phase.

During the phase transition(liquid to gas) the heat that was supplied at 100°C , causes a change in the position of the molecules relative to one another, without affecting the temperature.

This heat which is required to change the phase from one to another (phase) is called latent heat.

Latent heat here which is responsible for liquid-gas phase transition is known as latent heat of vaporization.

For water at 1 ATM latent heat of vaporization is 539cal/gm.

This is the heat responsible for the conversion of water to steam.
