This is because electrovalent compounds break into ions when added to water. as a result, they get dissolved.
while non polar compounds do not break into ions hence making them insoluble in water ..
solubility of substances work on the principle 'like dissolve like'.

Because of the increase interaction between the polar water molecules and the ions of the electrovalent compounds while the covalent compounds do not contain ions which can interact with polar water molecules therefore they are not their food they are not soluble in water.
