As evaporation is directly proportional to surface area this occurs, the water in the shallow plate gets evaporate faster because it obtains larger area and all the water molecule spreads each other but in case of glass the water molecules will be in a depth and it evaporates layer by layer and so it is slower than in shallow plate.
