Rate of evaporation is more when the area of exposed surface is more. As area exposed in a dish is more, evaporation is also more.

Increase in the surface area increases the rate of evaporation. Surface area of dish is larger than the surface area of bottle . That's why water in a dish evaporates faster than in a bottle.
