It is related to evaporation.
A pitcher has porous walls. When water is kept in it, the water comes out through these pores and evaporates.
Now, since evaporation is an endothermic process ( here water absorbs heat as it converts into vapours),so heat is taken away from the pot as well as the water inside it.
So water remains cool in a pitcher.
