Most plants obtain the water andminerals they need through their roots. ... At night, when stomata close andtranspiration stops, the water is held in the stem and leaf by the cohesion ofwater molecules to each other as well as the adhesion of water to the cell walls of the xylem vessels andtracheids.

water go from roots to leaves by the process of transpiration.
or we can say there is pressure which pull the water upwards.
