Answer:

Water is an excellent heat sink, meaning that a given volume of water can hold a lot of heat energy. Under the right conditions, it can also give up that heat energy quite readily. Add in its ubiquity and low cost, and you have an ideal coolant under certain conditions.

That brings us to the downsides of water as a coolant: It is corrosive to metal, which makes pure water detrimental to long engine life, and it expands when it freezes, which renders it unsuitable in freezing climates.

Those disadvantages are why most cars use a mix of water and antifreeze. Antifreeze, while more expensive, contains corrosion inhibitors to reduce the corrosive effects of water on the engine and has a much lower freezing point; but, it also has a signicantly lower heat capacity than water, making it a less effective coolant. A mixture of antifreeze and water combines the best of both worlds: you get the high heat capacity of water with the freeze and corrosion protection of antifreeze without the high cost of straight antifreeze.
