there is a simple reason, earthen pots have small pores through which water comes slowly, when it's hot the water outside evaporates cooling the pot and hence water. that is why it remain cool.

In an earth vessel the water evaporates quickly through the pores . evaporation causes cooling .some heat energy is used during the process of evaporation .
Since , this energy is taken from the water itself this leads to lowering of temperature in remaining amount of water .
