Water kept in an earthen pot penetrates through the tiny pores and gets evaporated and the energy required for evaporation is taken from the water on the pot. So when water evaporates water in the pot looses its energy which leads to decrease in the temperature of water and hence cooling is produced.

Water looses its temperature through small pores present in the pot. Hence in an earthen pot (matka) become cool during summer.
