''Absorption'' is a bulk phenomenon where the substance is uniformly distributed throughout the bulk.

Whereas, ''Adsorption'' is a surface phenomenon in which the substance is accumulated only at the surface and not in bulk.

So, when a chalk is dipped in ink, only the surface of it gets coloured. If you break the same and notice, the inside portion of the chalk still remains white which concludes that it's ''Adsorption''.

These phenomena happen due to Capillarity . The ink rises up in the capillaries found within a piece of chalk , ie the nooks and crevices in the structure of the piece of chalk.
