well, the reason is so because unlike cattles, we, humans, don't have the necessary bacteria in our intestines which can break down those cellulose. So it passes as it is in our faeces.

Humans can digest starch and glycogen as they are made with Alpha 1-4 bonds. We need help from certain type of bacteria which helps in breaking Beta 1-4 bonds. But humans doesn't have capacity to break Beta 1-4 glycosydic bonds, as we can't receive help from bacteria. So, we can't digest Cellulose.
