We cannot add items to the quick access toolbar by click on any item.

To add the items into the quick access tool bar right click on the desired option in ribbon tab and select Add to Quick Access Toolbar. It will add that item to the quick access toolbar.

If you want to manage the tool bar, then select Customize Quick Access Toolbar. And then select the item from the pane and click on Add button and then click OK Button.
