Although Earth is spherical, it is very large. So the areas we work in general can be studied or worked up on easier on a flat map than a spherical globe.
When the problem or issue at hand is between very far locations and the curvature of Earth is important, then spherical coordinate system is used and globe shape is used.
Also it is convenient to make maps which can be handled and stored easily than spherically shaped globes.
