We know that when bacteria acts on milk we get curd, so what effect makes the milk go stale?

Hi friend,

when we pasteurize the milk and add whey to it .there is emergence of lactobacillus start appearing and that bacteria converts lactose into lactic acid which is responsible for sour taste of curd
