Do they ONLY contain hydrogen & oxygen atoms?

No. It is not necessary to have only Oxygen and H to have a closed ring structure. Elements like Nitrogen work just fine.

Why? Because the thing you need to form a cyclic hydrocarbon is the ability of that element to form a minimum of 2 covalent bonds.
