Fat globules are very large molecules. So, in our small intestine fat is broken down into small fat globules by bile salt released by liver.

then pancreatic lipase breaks the small fat globules into fatty acid and glycerol.

This process is known as emulsification of fats and the fats are known as emulsified fat globules.
