Fat globules in milk are a sophisticated delivery system, targeted not only to release fatty acids, but also to impart additional gut health. Fat globules are only partly digested in the gastric phase. Gastric lipase in human adults results in the release of 5–30% of the fatty acids. Most of the lipids are digested in the duodenum, once mixed with bile salts and pancreatic secretions (Armand et al., 1999; Phan and Tso, 2001). The kinetics of digestion of milk fat globules are highly dependent on the size of the fat globules, but also on the quality of the interface and its structure. The size and supramolecular structure of the fat globules will affect the kinetics of lipolysis (Armand et al., 1999; Berton et al., 2012).
