walls of many seaweeds containphycocolloids (algal colloids) that can be extracted by hot water. The three majorphycocolloids are alginates, agars, and carrageenans. Alginates are extracted primarily from brown seaweeds, and agar and carrageenan are extracted from red seaweeds.

Phycocolloids are nothing but the covering on the body of the algae and other microbes which prevents them from drying or freezing in the extreme environment in water, it is basically a protective layer.
