Salivary amylase is a glucose-polymer cleavage enzyme that is produced by the salivary glands.

Answer:
Salivary Amylase also known as ptyalin is an enzyme present in saliva that breaks down starch into disachharide ( maltose).
▪ 30% of starch digestion occur in mouth with the help of this salivary Amylase.
▪ no digestion takes place in oesophagus.
▪ salivary Amylase gets inactivated in the presence of acidic pH as we know , in stomach gastric juice contains HCl . this HCl retards the functioning of salivary Amylase..
