First part if bridges were closed people/goods would have to be transported by rail around city or over ferries. SF would have minimal problems since it is connected by land, but NY is an island and thus they would be more in large hardships.
Bridges are a symbol of areas the same way buildings are symbols of ones space. they are just familiar visual reminders. Remarkable bridges seem remarkable because most people cannot fathom the engineering evolved or the architects vision. they were either complex (Golden Gate) or just visually amazing (Sundial bridge or James Joyce Bridge) or combos of both (Millau Viaduct).
Bridges are a symbol of achievement of human ingenuity to travel and connect distant area with simplicity riding of complex-structures.
