What are the differences between habitants and inhabitants?

You should use inhabitant. It's more common and it's probably the word you want to use in most cases.

Habitant can mean the same thing as inhabitant, but it also has a completely different (and more specific) meaning: a Canadian farmer with French origins.

More specifically habitant refers to a person of French origin who settled in (migrated to) Canada a long time ago and worked as a farmer. Habitant can also refer to someone who is a descendent of such a settler.

 Inhabitant = a person or animal that is a permanent resident of a particular place or region. Habitant = a less common word for inhabitant
