Rancidity refers to unpleasant odour and taste that occurs from spoilage of food.

Explanation:

E.g.:Oil becomes rancid due to decomposition of fats it contains or sometimes milk becomes rancid due to not heating it in humid atmosphere, etc.

Eg:- chips packets are flushed with nitrogen to prevent rancidity, if nitrogen was not flushed bad smell and taste occurs.

There are three types of rancidity :

1.Hydrolic rancidity: it occurs when water splits fatty acid chains away from the glycerol backbone in glycerides.

2.Oxidative rancidity: it occurs when  the double bonds of an unsaturated fatty acid react chemically with oxygen.

3.Microbial rancidity: it occurs when microorganisms such as bacteria use their enzymes to break down chemical structures in the fat.
