It is defined as chemical decomposition of oils and fats which in another words is spoiling food materials that difficult for consumption. It can be prevented by following methods:
(i) The packing of food materials should be replaced the air with Nitrogen.
(ii) The food materials should be placed at very low temperatures.
(iii) Addition of antioxidants also prevents rancidity process.

Answer -
we can check rancidity thru two methods :-
check the smell usually it becomes foul
and see if the the fats and oils are oxidized ,if yes then it is rancidity.
