Saliva contains amylase(also known as ptyalin), an enzyme which breaks down starch into simpler sugars such as maltose and dextrin. Also, saliva moistens the food inside our mouth which helps in making food bolus helping in digestion.

when we eat something our mouth starts watering.this is actually not the water,but a fluid called saliva secreted by salivary gland.the saliva contains enzymes called salivary amylase that breaks down starch which is a complex molecule to give sugar.the food is then mixed thoroughly with saliva and then moved around the mouth while chewing by the muscular tongue..
