Its been a while since I was well read on the subject, but my understanding is that the concept of society arose starting in the 18th century as a part of the secularization of the West in the context of the rise of the modern liberal nation state. So, you have the rise of bourgeois intellectuals who are neither a part of the church or the state (e.g. newspaper editors, philosophers, etc.). Society is a way in which they can make and legitimate claims against the church and state in the name of the people. Society also became a domain for an emerging field of experts (e.g. sociologists, public health, hygiene) to produce knowledge of and make interventions on the citizens of a nation.

Which is just to say that society isn't something exists, its a way to imagine the masses of people in an individual political unit in the context of a political project. Sometimes this is in a way to limit the power of the state ("You're oppressing society"), other times its to increase it ("Society must be protected from deviants").
