What causes rancidity? Name an antioxidant which prevents rancidity?

Rancidity is caused by bacterial decomposition of fats and oils in foods

And

BHA and BHT, Vitamin V ( ascorbic acid ), and Vitamin E ( tocopherols ), arenthe antioxidants which are used to prevent rancidity.

when food items are kept unprotected for some time they give some unpleasant smell and taste also and become rancid this process is called rancidity
1)--causes-)= the microorganisms oxidize the fat and oils present in them ,
2)it's method to prevent==
a) keeping the food at low temperature
b) keeping food items in air tight containers
c) By filling nitrogen in the food storage bags
3) Antioxidant which are used to prevent rancidity are - ascorbic acid and tocophorals
