When we mix yeast in maida the fermentation takes place. the yeast reproduces rapidly and the glucose present in maida is used in respiration. in fermentation yeast converts sugar into alcohol and carbon dioxide is also produces. the production of carbon dioxide bubbles increase volume of the dough.
