Fat/oil containing food materials are exposed to air, for a long time they react with atmospheric oxygen and it is responsible for spoiling of food. This process is called “rancidity”.

galvanisation :

Galvanization or galvanizing is the process of applying a protective zinc coating to steel or iron, to prevent rusting.

FATS AND OILS WHEN KEPT FOR LONG TIME GET OXIDISED BECAUSE OF WHICH THE TASTES AND ODOUR OF FOOD CONTAINING THESE FATS CHANGES AND IT BECOMES UNFIT FOR CONSUMPTION. THIS IS CALLED RANCIDITY.
