Emulsification of fats:

  • When fats in food reaches the small intestine , the bile juice secreted by the liver acts upon the these fats .
  • These are big fat globules which are broken down to form smaller fat globules .This is called emulsification of fats .
  • This fats can be further broken down to form fatty acid and glycerol when lipase acts upon the emulsified fats.
