The term food preservation refers to any one of a number of techniques used to prevent food from spoiling. It includes methods such as canning, pickling, drying and freeze-drying, irradiation, pasteurization , smoking, and the addition of chemical additives.

Advantages: Pickling rivals freezing, canning and drying for preventing foods from spoiling. It also adds unique flavors to meals that might otherwise be boring. Many fermented foods are also good sources of nutrients, including vitamins, amino acids and healthy bacteria.
