Churning is the process of shaking up cream or whole milk to make butter, usually using a butter churn. In Europe from the Middle Ages until the Industrial Revolution, a churn was usually as simple as a barrel with a plunger in it, moved by hand.

Milk is a colloid which can be separated into cream and skimmed milk by Churning. Centrifugation is closely related to churning. By churning a layer of froth is created above the layer of skimmed milk. Skimmed milk is good for people suffering from obesity as the cream is actually a chunk of fatty acid. The milk is turned at a high speed to separate its components.
